Is there a way to enable non registered users to post questions, comments and answers without registering?  I would like to have this option, but with reCaptcha required.  I think this would help getting more questions and answers from people that dont want to take the time to register.

Yes.

Access the administrative panel of your website. Click the tab "permissions".

Change to "Anybody" the options "asking questions", "answering questions" and "adding comments". Do not forget to save after making the changes.

In tab spam of administrative panel, check the option "Use captcha for anonymous posts" is enabled.

If the option is not showing up, check if plugin reCaptcha is installed in tab "plugins".

The demo site Question2Answer is configured exactly like this:
